The petrification process doesn't take long at all. A petrified dog was found in 2.5 to 3 foot tree. One guy left egg corns in water for a year and they had petrified. There also is a petrified fish giving birth, a cowboy boot from 50+ years ago is petrified with the cowboy's leg still in it. Mount Saint Helen blew trees into lakes in the early 1980's and many are already beginning to petrify. Kent Hovind has a petrified pickle found in a house, made in the 70's, in his possession.
